Balsamic Vinaigrette

Connor and I felt like improving some salad dressing, so we tried this:

1 part balsamic vinager

1 part olive oil

a lot of fresh basil

a lot of fresh parsley

a few cloves of garlic

some salt and pepper

maybe a few pieces of rosemary.

Mince everything and add it to the oil and vinager. Let it sit overnight to let the flavors seep a bit before using it. We happen to have a lot of fresh basil and parsley in the garden right now, but if you have different herbs I bet they’d be good also. The key is really the garlic. Gives it a really nice spicy bite. Also, this dressing is REALLY good with white cheddar cheese and fresh spinach, which are pretty much my favorite things for salads.
