Lemon Chicken & Parsley Stars

This was my dinner yesterday, it was delicious. Here’s what  I did.

2 boneless skinless chicken breasts, cut into strips.

1 lemon

Rosemary, thyme, parsley (no sage this time, Simon and Garfunkel.)

Salt + Pepper.

Put the chicken in the pan with some olive oil, juice the lemon into it (I didn’t worry about the seeds, just picked them out before I ate it. If you’re less lazy than I am, get the seeds out before.) I seriously juiced the whole lemon into this chicken, even some of the fruit made it in. This makes for VERY TANGY chicken, but that’s how I like it. Throw some of those herbs on, cook till it’s done to your liking. Add salt and pepper to taste.

And now the parsley stars: This was inspired by Bobby Flay’s show, Boy Meets Grill. He was doing a fancy dinner, grilled fish, mango foster with creme fraiche, etc. and orzo with parsley. I don’t have orzo at home but I do have stars. Really any small pasta will be good. Even penne would be good, I bet.  What you do is just chop parsley finely, (3-4 tablespoons chopped parsley per pound pasta) and add about a tablespoon of butter (per pound pasta) and serve slightly warm. Season with a bit of salt + pepper to taste. Very refreshing, a perfect way to eat pasta in summer.
